Thanks to the wonders of Google search and Rose Anne, the mastermind behind Mimiccreme,(a soy, dairy and gluten-free, all natural nut cream) I have discovered something miraculous. Simple. Delicious. Homemade vegan ice cream… and sans machine!
However, even after I made this wonderful ice cream, I felt like something was missing. Cookies.
Introducing… Chocolate Chip Ice Cream Sandwiches

Ingredients for ice cream:
3 cups mimiccreme (unsweetened, sweetened, or sugar-free)
Sugar to taste (I didn’t add that much because I used the sweetened variety, but if you want extra sweet add extra sugar)
2 tsp vanilla extract
Mini Chocolate Chips (Dairy-Free)
Pinch of sea salt
- Place all ingredients in food processor or blender and mix well.
- Pour into glass container or ice trays and freeze for several hours.
- Re-mix again in food processor or blender and place back in freezer until completely frozen.
- Assemble cookie sandwiches and enjoy!
